Lemon Herb Coconut Tofu with Udon & Breaded Coconut Soy Curls

My step-kids have been here for Spring Break and since we’re not able to eat out, we’ve all been cooking up a vegan storm. Tonight we made a double batch of Lemon Herb Coconut Tofu with Udon / Breaded Coconut Soy Curls, which turned out particularly well.

The base recipe is from 500 Vegan Recipes. I added the Breaded Coconut Soy Curls on the fly.

Lemon Herb Coconut Tofu with Udon & Breaded Coconut Soy Curls

Lemon Herb Coconut Tofu with Udon Ingredients:

1 package (10 ounces, or 280 g) udon noodles
12 ounces (340 g) extra-firm tofu, drained and pressed [we like the high protein super firm from Trader Joe’s that doesn’t have to be drained & pressed]
1 can (14 ounces, or 414 ml) coconut milk
3 T (45 ml) fresh lemon juice
½ cup (32 g) finely chopped scallion
7 T (21 g) chopped fresh chives
3 T (18 g) finely chopped fresh basil or 1 T (2 g) dried [we used fresh]
1 T (3 g ) fresh dill or 1 tsp dried [we used dried]
1 T (4 g) finely chopped fresh parsley or 1 tsp dried [we used fresh]
¼
tsp yellow curry powder
Salt and pepper, to taste

Breaded Coconut Soy Curls Ingredients: [my creation, ingredients are estimates]

2 cups Soy Curls
2 T soy sauce
1 T flax seeds
3 T cold water
1 T agave syrup, dark grade
1 T shredded coconut
2-3 T Japanese style Panko breadcrumbs
Lemon pepper, to taste
Canola oil

Directions for Lemon Herb Coconut Tofu with Udon

Cook the udon in lightly salted water according to the package directions.
While the udon is boiling, cut the tofu into bite-sized triangles and set aside.
To another pot, add the coconut milk, lemon juice, scallion, chives, basil, dill, parsley, and curry powder.
Bring to a boil.
Reduce to a simmer.
Add the tofu and simmer, uncovered, for 10 minutes.
Drain the udon and add to the sauce. Toss to coat. Add salt and pepper to taste.

Directions for Breaded Coconut Soy Curls: [my creation, directions are approximate]

Reconstitute the soy curls in hot water with a liberal dose of soy sauce for at least 15 minutes.
Drain soy curls.
Grind 3 T  flax-seed, combine with 3 T water, whip with fork.
Add agave to flax mixture, stir.
Coat soy curls with flax/agave mixture.
Combine Panko with shredded coconut.
Coat soy curls with Panko/coconut mixture.
Brown coated soy curls over medium high heat.
