Sometimes simple is better: Goudreau’s Chocolate Cake


Stayed too long at the station working on the show. Then needed two hours to wind down. Typical. Earlier today I made this deceptively simple cake out of Colleen Patrick-Goudreau’s The 30-Day Vegan Challenge, just because it sounded so easy and the ingredients were right there in my pantry. I have lots of good things to say about this new book, but for now:

Chocolate Cake
– 1½ cups unbleached all-purpose flour
– ¾ cup granulated sugar
– 1½ tsp salt
– 1 tsp baking soda
– ¼ cup unsweetened cocoa powder
– 1½ tsp vanilla extract
– 1/3 cup canola oil
– 1 T distilled white vinegar
– 1 cup cold water

350°, 30 minutes. Turned out light and fluffy. What could be easier?
