Veggie Pot Pie for a cold winter lunar eclipse night

Inspired by Veggie-Edamame Pot Pies in Robin Asbell’s Big Vegan, using whatever I had on hand tonight.

Filling Ingredients:

  • Canola oil
  • Yellow onion
  • Carrots
  • Sweet potatoes
  • Frozen peas {edamame does sound like a good twist to try}
  • Frozen corn
  • White wine vinegar
  • White flour
  • Dried parsley
  • Dried sage
  • No-salt 21 spice seasoning
  • Salt
  • Pepper

Veggie Pot Pie

Crust ingredients:

  • White flour
  • White whole wheat flour
  • Soy milk
  • Bragg’s
  • Earth Balance coconut spread
  • Canola oil
  • Ice water
  • Earth Balance buttery spread {For brushing the top of the crust. The pies weren’t browning fast enough for me, so I did this to speed browning along.}
